When reviewers praise a staff member by name, amplify it. When they complain about policy, explain the reason behind the rule, then show flexibility where you have it.

Returns: policy plus humanity

Most retail 1-stars are return disputes. State the policy's reason (not just its existence), then invite them back to find a solution. "No refunds, period" loses every future reader; "here's why, and here's what we can do" keeps them.

Be honest about the economics of a small shop when relevant — customers respect "we can't match warehouse prices, but here's what you get instead" far more than pretending the gap doesn't exist.
