The location does pay a famous landlord — but 'tourist trap' is the reputation we've spent years cooking against. Our regulars are locals, and dishes like our slow-braised ragù take the same hours whether the diner is from around the corner or across an ocean. Come back for the food alone; let it argue with you.

Respond to food complaints with kitchen credibility
Vague apologies read as PR. Specifics read as a real kitchen: "the lamb should never leave the pass at that temperature". Show you know what went wrong technically, then invite them back to taste the standard.
Handle service-pace complaints honestly
If Saturday nights are slow because you are full, say so with grace and give the insider alternative: "for a relaxed pace, Thursdays are the secret". Honesty about busy nights converts better than denial.
